Quiche Cupcakes 

We eat a lot of eggs. They are cheap, high in protein, and quick to make. However, they can be a bit monotonous at times. I have a few ways to change it up, so we aren’t eating plain eggs every morning. 

My kids favorite way to eat eggs are quiches. They love when we switch things up a bit and make them into cupcakes. They are also easy enough that a 9 year old can do it! 


Ingredients:

8-10 eggs

Sliced lunch meats 

1/4 cup water

Cooking spray

Assorted toppings (cheese, bacon, avocado, etc.)

To start with preheat your oven to 375^F. Prepare your cupcake pan by using non stick cooking spray. (I prefer coconut but whatever floats your boat)

Place the slices of meat into each cupcake well, like a liner. 


In a bowl whisk together eggs and water until well blended. Pour into each cupcake well, just shy of the top of the meat. 


Sprinkle any extra meat or cheese on top and bake. At 375^F it takes about 20 minutes. They are done when they don’t look wet or runny. 

I love to add a slice of avocado and since my kids eat dairy they add cheese or sour cream. This is a quick, easy, and healthy meal. Enjoy!
