We eat a lot of eggs. They are cheap, high in protein, and quick to make. However, they can be a bit monotonous at times. I have a few ways to change it up, so we aren’t eating plain eggs every morning.
My kids favorite way to eat eggs are quiches. They love when we switch things up a bit and make them into cupcakes. They are also easy enough that a 9 year old can do it!
Sliced lunch meats
1/4 cup water
Assorted toppings (cheese, bacon, avocado, etc.)
To start with preheat your oven to 375^F. Prepare your cupcake pan by using non stick cooking spray. (I prefer coconut but whatever floats your boat)
Place the slices of meat into each cupcake well, like a liner.
I love to add a slice of avocado and since my kids eat dairy they add cheese or sour cream. This is a quick, easy, and healthy meal. Enjoy!
