Given my love for pancakes, I have another way to make pancakes healthy! This way is more like it’s Bisquik competitor and even my most paleo hating kids love them!
1 3/4 cup almond flour
1 tsp baking soda
1/4 tsp salt
1 tsp vanilla extract
3/4 cup almond milk
Whisk those altogether until smooth. Pour onto a griddle. Cook for 1-2 minutes before flipping. Give them a good pat with the spatula to help the middle cook quicker. Cook 1-2 minutes on the other side. Serve immediately! This makes about 8 1/4 cup size pancakes.
My kids prefer to eat them with maple syrup. I’m a big fan of berries on top of mine.
However you eat them, these are a sure way to start the day off with happy kids. Which makes a happy wife. Which leads to a happy life. Or so I have heard. 😉
